Sweet Ginger Tofu
This versatile, super-simple tofu recipe is one of my go-to recipes on busy nights. The sweet and savory marinade adds lots of flavor to the tofu as it roasts, and the result pleases kids and adults alike. Best of all, it goes well with all sorts of foods, from simple veggie stir-fries or slaws , to rice, soba, or quinoa. It's even great served cold in a wrap.
