Sweet Ginger Tofu
This versatile, super-simple tofu recipe is one of my go-to recipes on busy nights. The sweet and savory marinade adds lots of flavor to the tofu as it roasts, and the result pleases kids and adults alike. Best of all, it goes well with all sorts of foods, from simple veggie stir-fries or slaws, to rice, soba, or quinoa. It's even great served cold in a wrap.
INGREDIENTS
- 1 14 oz (397 gm) package extra firm tofu
- 1/4 cup (65 ml) tamari soy sauce (reduced sodium is fine)
- 1/4 cup (60 ml) pure maple syrup, preferably Grade B
- 1 1/2 teaspoons finely minced ginger
- 1 teaspoon toasted sesame oil
PREPARATION
1. Preheat the oven to 425°. Lightly oil a medium baking dish. Line a cutting board with a folded tea towel or absorbant paper towels. Drain the tofu, place on the cutting board, and press gently with another layer of towels. Remove the top layer of towels and cut the tofu into 1-inch cubes. Pat again with the towels to remove as much moisture as possible.
2. In a small bowl, whisk together the soy sauce, maple syrup, ginger, and sesame oil. Place the tofu into the prepared baking dish, and pour the soy mixture over it. Toss the tofu pieces gently to coat with the marinade.
3. Roast the tofu in the preheated oven for about 40 to 45 minutes, turning the cubes over midway through cooking, of until most of the marinade is absorbed, and the tofu is a deep, burnished brown. Serve over rice or soba, drizzling any remaining marinade overtop. Enjoy!
